Saute

To saute literally means to jump.  For culinary purposes it means to fry quickly in a little bit of hot fat. What fat source you use is up to you.  Olive & coconut oils are my fats of choice. The goal of this staple cooking method is to keep the item moving.

PRO TIP:  Heat up the pan before you add the oil/fat.  If you add the oil before the pan gets hot, it takes quite a bit of time to get to the right temperature.  Adding when the pan is already hot ensures a quick and even heat.

@stylebuzz and I were talking yesterday about beets and sauteeing beet greens.  Yes! I know, they’re edible and SO good for you. Save those lovely greens and eat them, they are full of nutrient density, and complete the beet if you will. They cook much like spinach or kale, are considered a dark leafy green so good for the lungs and the liver and a myriad of other things.

Throwing away the greens not only creates food waste, but you’ve paid for them, and they are part of the whole food.  Continuing to use beets as the example, if you eat the beet(root), and not the green, you do get some of the nutrients in the beet, but eating the beet and the green makes the WHOLE food.  So while your body is stoked on the nutrients from the beet(root), it’s also wonder where the missing pieces from the greens are. Make sense?

You don’t need to eat them at the same time, though I encourage eating them within a 24 hour period for maximum efficacy.

RECIPE

Sauted Beet Greens with ginger, garlic and toasted cashews

INGREDIENTS

Greens of 1 bunch beets, including stems.  Stems cut into ½ inch pieces, greens ripped into bite size pieces

1 small beet, julienned

1 medium carrot, matchsticked

1 large or 2 medium garlic cloves, minced

1 tbsp ginger, minced

¼ cup cashews, roasted and rough chopped

PROCEDURE

Heat pan over medium high heat.  Add oil (I used coconut)

Add garlic/ginger & a pinch of salt.

When fragrant (about 30 seconds)

Add beet, stir to combine for 1 minute

Add carrot, stir to combine for 1 minute

Add stems of beet greens, stir to combine for 1 minute

Add greens, stir to combine and let them wilt

Turn off heat, add cashews and eat

 

You’ll pee pink, so don’t be alarmed:)  Beets do that
