Wanna hear a secret?
I poured this dressing all over some roasted sweet potatoes, sautéed kale and a little seaweed. Okay, not much of a secret, but I piqued your curiosity.
It was a quick and easy dish, and one that would compliment your Memorial Day BBQs.
Roast 2 medium sweet potatoes at 425F for about 30 minutes. I didn’t use oil as the dressing has quite a bit of oil.
Saute a bunch of lacinato kale (or really any dark leafy green)
Soak and sauté some arame seaweed (thyroid loving iodine!)
Combine all together in a bowl and pour over with this kick ass dressing.
Miso Sesame Dressing
2 tbsp sweet white miso
3 tbsp rice wine vinegar
1 garlic clove
1/2 shallot, small dice
1/4 cup toasted sesame oil
1/4 cup veggie stock (you can use water, it will just not have as much flavor)
1 small adult thumb size piece of ginger, skin removed
1/2 tsp. coconut aminos, soy sauce or tamari
1/2 medium lime, squeezed
Combine all ingredients in a blender. Pour over warm potato mixture
