I sure do. So I’m pretending I’m somewhere tropical with this no sugar added mango coconut macadamia chia pudding.
Mangos are so sweet on their own, I decided it needed no added sugars like maple or dates.
Mangos are a nutrient dense fruit, high in vitamins like A, B6 and E. It’s also a good source of potassium and fiber.
INGREDIENTS
1 cup full fat coconut milk
1/4 cup organic chia seeds
1/4 cup mango, small dice
1/4 cup macadamia nuts, toasted and rough chop
1 tbsp shredded coconut, toasted (optional)
1 tsp maca powder
1 tbsp tocos
1 tsp vanilla extract (optional)
PROCEDURE
Whisk together coconut milk, chia seeds, maca powder, tocos and vanilla extract (if you are using it). Place in fridge for at least 6-8 hours (overnight).
Top with mango, macadamia nuts and toasted coconut.
