Burrito Bowl Goals

 

With the exception of the vinegar I used in the dressing and spices for the walnut taco meat, the ingredients in this beautiful bowl of goodness are straight outta the 🌏. That means nothing was packaged or processed and it’s nutrient density is next level. Also easy to assemble 🙌🏻👏🏻💃🏼.

🍲Rice (cooked in veg stock, I used homemade, you can use store bought)
🍲Black beans (I used dried, can use canned…rinse well)
🍲Avocado
🍲Pico de gallo
🍲Romaine
🍲Creamy Almond Vinaigrette
🍲Lime
🍲Walnut Taco Meat (adapted from @rawvolution)
🌯1 cup raw walnuts, ground in food processor
🌯3/4 tsp ground cumin
🌯1/4 tsp ground coriander
🌯1/4 tsp chili powder
🌯1 tbsp soy sauce or tamari
🌯🌯In a small bowl, mix together walnuts, cumin, coriander and chili powder. Add soy or tamari and mix to combine.
