I’m getting back in the swing of things post 3 weeks of travel, jet lag and my near death experience yesterday (check my instagram for a little more info if you’re interested). Okay, I’m a touch dramatic, and I’m fine thanks for asking.

I made a chickpea omelet full of veggies and topped it with a lime cashew cream, that is good but needs a little work. There were a few trial runs that were not a good look.

Chickpea flour (also called garbanzo or gram) is made from chickpeas ground to a very fine flour. Therefore it also contains protein, fiber and all of the goodness found in chickpeas. Not as nourishing as the whole bean, this is a hearty and nourishing gluten free flour to use.However, you can’t use it as a 1:1 substitute with All-Purpose Flour. It lacks the gluten (aka the binding substance) that will hold everything together. You can use it in a blend with other flours and add xanthan gum, which is natural substance and acts as the binder.
