A tomato is the color, the shape externally, and internally it resembles a heart and lungs.
It is nutrient dense with cool things that contribute to cardiovascular goodness like beta-carotene, lycopene, folate, potassium, and Vitamins C and E (both fat soluble vitamins, which means it needs fat to assimilate in the body – think about it, olive oil and avocado taste GREAT with tomato. Mother Nature is a cray! And a food pairing yenta!) Eat raw and cooked for different nutrient densities.

Best to buy organic as you will most likely, be eating the skin.

You do not need to store tomatoes in the fridge and they are best to cut with a serrated knife. While not necessary, this makes it easier to cut through the tomato skin without squishing it.
